Hello Friends. Do you have a sweet tooth? Better yet, a strawberry sweet tooth? I hope so because today for the Pinterest Challenge, we are sharing some of our favorite recipes. I’ll admit it – I’m not much of a fruit eater. I’m more of a cake eater. Any cake will do but white cake, like wedding cake, is my favorite. I could have made a strawberry cake and that would suit me just fine but I wanted something to sooth the sweltering heat outside. So I’m sharing how to easily make a yummy no-bake strawberry lemonade icebox pie! Wow, that’s a mouthful!

How to Easily Make a Yummy No-Bake Strawberry Lemonade Icebox Pie!
If you aren’t from the south, you may be asking yourself what exactly is an Icebox Pie. Well, let me tell you. It starts with the desire to entertain and be a good hostess. I guess you could say it’s another excuse to bake which all good southern ladies like to do. But in doing so, we don’t like to heat up the kitchen so a no-bake pie is the answer on a hot summer day.
Strawberry Lemon Icebox Pie by the extraordinary Cindy Richter
Icebox Pies usually have a pressed-in cookie type crust. You can add things to the crust like chopped pecans (pronounced puh-kaan), coconut or crushed almonds, and the like. It just depends on what flavor pie you’re making. For this one I used a plain store bought graham cracker crust.
See the strawberry puree bunched up on the sides? That’s because I poured it too fast. Not the best.
Before you say anything, I know. No self-respecting southerner would use a store bought crust but I ran out of time. Goodness me, don’t tell momma! Just kidding. My momma would (probably still does) buy potato salad at the store then transfer it to her own bowl to serve at the family reunion. All I can say is it takes all kinds.
Not eating the strawberry lemonade icebox pie fast enough can get a little drippy.
You can see below that if you choose to use a store bought crust, it can be disguised with a towel around the edge. π Okay, so the aluminum pan isn’t really hidden but if your friends are real friends, they won’t say anything. Maybe. It also helps with condensation if you by some miracle have any left sitting out.
Wrap a towel around the aluminum pie pan to disguise it! π
On to the best part! Icebox pies are served cold, have a creamy center and most of the time have a whipped topping. This one was made with frozen lemonade concentrate and sweetened condensed milk. I don’t think any recipe could be yucky if it contained sweetened condensed milk. Add in heavy whipping cream and oh my soul it’s delicious!I don’t recommend eating the decorative lemon rind. Bleh.
The only negative thing I can say about the pie is that you have to eat your piece quickly. If you have guests over and one of them speaks ten words a second with gusts up to fifty, this is not the dessert you want to serve. And it’s not for an outside party because hello, it’s hotter than a honeymoon hotel out there and these pies can get drippy real quick.
With all that said, here’s the recipe.
Strawberry Lemonade Icebox Pie
Prep Time: 20 mins
Freezing Time: 6 hours
Ingredients:
- 2 cups of graham cracker crumbs
- 1/2 cup melted butter
- 2/3 cup of frozen lemonade concentrate
- 1 – 14 oz. cup of sweetened condensed milk
- 1 cup of heavy whipping cream
- 4 Tbsp. of powdered sugar
- Small carton of strawberries (hulled)
- 3 Tbsp. honey
- 1/2 tsp. vanilla extract
- 1 Tbsp. water
Instructions:
~ Mix your graham cracker crumbs and melted butter together then pour into a 9 inch pie dish and press down. Make sure to get it up on the sides. Or purchase a premade graham cracker crust.
~ In a blender, blend honey, vanilla and water and continue adding strawberries until you have pureed 1 cup full. Set aside.
~ With a whisk mix lemonade concentrate with sweetened condensed milk until combined. Set aside.
~ With a hand mixer, whip heavy whipping cream until soft peaks form. Then gradually add powdered sugar until you get the consistency of stiff whipped cream. Gently fold into lemonade/sweetened condensed milk mixture.
~ Pour half of the strawberry puree into the bottom of the pie crust. Slowly pour the lemonade mixture on top of the strawberry puree. If you pour it quickly, all the puree will run to the outside and you won’t have an even dispersion on the bottom. Smooth the top when finished.
~ Place the remaining strawberry puree in dollops on top of the lemonade filling. Swirl together the dollops and filling with a toothpick or whatever you want to use.
~ Add extra sliced strawberries to center of pie for edible decoration. I also added a swirl of lemon rind that I don’t recommend eating. π
~ Freeze pie for 6 or more hours before serving. If you have any leftover, keep frozen.
Well that’s how to easily make a yummy no-bake strawberry lemonade icebox pie. It’s simple to make, not to tart and not to sweet. And I’m telling you, it’s so good it’ll make childbirth a pleasure. Okay, that might be a slight exaggeration but seriously, you have to try it!

My mama was not averse to using a store bought crust, either.
