Hello Friends! Remember in the last post I had 2 lanterns full of real lemons? Well I needed to do something with them so I let my middle child Macy decide what to bake. Surprisingly, she chose Easy Lemon Tea Cookies. I was like, really?! Why not lemon ice box pie or lemon bars or super duper lemon cheesecake? Honestly, we have so many lemons sitting around in the lanterns that we can bake 3 or 4 more desserts and be quite ecstatic around here. We are in lemon heaven!
Easy Lemon Tea Cookies
First, this recipe was found on Spoonful of Flavor. We made a couple of adjustments but this was one of the easiest recipe’s ever to bake. Seriously, like ever. And goodness me they turned out delicious! At first I thought they were a little dry but that was after my third cookie and without anything to drink in between. Not kidding! And the tartness of the lemon works nicely with the coating of powered sugar on the outside. Now for the recipe. ๐
Ingredients:
3 cups of All Purpose Flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup confectioners sugar (plus 1 cup for outside coating)
1 egg yolk
1/4 cup freshly squeezed lemon juice (2 large lemons)
2 tablespoons lemon zest
1/2 teaspoon Mexican Vanilla (or vanilla extract)
Instructions:
- Preheat Oven to 350 degrees and prepare your baking sheets. I use these Kitzini silicone baking sheets on these Nordic Ware Natural Baking Pans. They don’t burn and clean up is easy peasy lemon squeezy. You know I had to say it. LOL.
- In a small bowl, whisk the flour, baking powder and salt together and set aside.
- In a stand mixer with the paddle attachment, cream together the butter and confectioners sugar until light and fluffy.
- On low speed, mix in the egg yolk, fresh lemon juice, lemon zest and Mexican vanilla until incorporated.
- Slowly add the dry ingredients from the bowl you set aside earlier.
- The dough will be stiff but not crumbly. If crumbly, kneed in your hands to warm up and soften.
- Pinch the dough in your fingers and form a 1 inch ball. Place each ball 1 inch apart on the baking sheets.
- Bake between 20-25 minutes depending on your oven. They should be slightly golden brown.
- Remove from oven and cool slightly (3 – 5 minutes).
- While the cookies are still warm, roll them around in a bowl of confectioners sugar and place on wire rack to cool completely.
Notes and Hints:
We rolled out 40 balls with this recipe.
Prep time is 10 minutes and bake time 25 +/- minutes
If you push and roll your large lemons across the counter until squishy, it’s easier to get more juice out.
Zest your lemons first to save the amount of lemons needed for recipe (2 large lemons is perfect for everything)
Finally, if you don’t have Mexican Vanilla, any vanilla extract will work.
These very Easy Lemon Tea Cookies are perfect for a summer tea party, a lay by the pool party or even plain! Seriously, if they weren’t easy, I wouldn’t have tried it. Let me know if you make them and what you think.

OMGoodnesssss, Cindy! I happen to have a bunch of lemons in the frig right now… I was just telling Charles about your recipe (I absolutely have loved these cookies since high school and the first time I had them!). Let your daughter know she did a great job making these cookies!!! Good choice. ๐
