Hey Friends! Do you ever crave sugar? I can honestly answer – not really. I’m more of a bag of chips kinda person and I’m not exactly sure if that’s better or worse. Either way, this month for the Pinterest Challenge, we are sharing Valentine’s Day Recipes. I’m showing how to make this easy, yummy and adorable Valentine’s Day recipe. They are so stinkin’ cute that you’ll want to make several and look for people to give them too. Seriously!

Not all the recipes today are sweet. Some are not what I’d imagine having on the big day or serving my loves but isn’t that one great reason God made us unique? To keep things interesting? Yes! When I think of Valentine’s Day, I think new underwear. Yep, undies. Not the sexy kind but the cotton briefs with pink hearts or cartoons all over them. For whatever reason, that’s what we got from my mother when I was little. That and a box of candy.
Steps 1 – 5
When my kids were little we gave them candy and enjoyed making the Valentine’s Day box for the school party and the fun cards they’d stuff inside everyone else’s box. You had to make sure the slit at the top was large enough to accommodate any suckers or bracelets you might get. Mmm, those were the good ol’ days.

Nowadays, I’ve heard kids get 2 parties at school for the entire year and it’s usually Halloween and Christmas. What the cuss?! That is terribly sad. If I had kids today, they’d be home schooled even if I lost all of my hair and pulled out my fingernails. Which is what would happen if I had to teach my kids and keep them alive in the process. But I digress.
Here’s the oh-so-easy-and-cute recipe for these little Valentine’s Envelope Pastries. I made up that name. I suppose you could call them whatever you want.
Ingredients:
Store bought pie dough
A Can of cherry pie filling or fave jam
Egg wash
That’s it. Only 3 things! I sprinkled a cinnamon and sugar mix on ours but that’s totally optional.
Instructions:
Roll out the room temperature dough and cut out a diamond shape with a sharp knife. Mine ranged from 4″ to 6″ wide and tall.
Add about a tablespoon (it depends on how large your diamond cut outs are) of Cherry Pie filling or favorite jam to the middle of your pastry.
Fold up the bottom to meet the filling. Then fold the sides in. This forms your envelope shape.
With extra pie dough, cut out a small heart with the knife or a cookie cutter. I used a knife. Then place the heart in the center of the folds.
Brush on an egg wash then sprinkle with cinnamon and sugar.
Place on a non-stick baking sheet and bake at 350 degrees for about 20 minutes – depending on your oven.
Serve with or without homemade whip cream
Hints and Tips:
I only got about 6 envelopes from a refrigerated box with 2 crusts inside. If you want to make more, it’s probably best to make your own dough but the store bought kind is why this is so easy.
If you have over stuffed them, the guts will spill out.
Pinching the creases together helps.
I found the cherry pie filling works and looks better than the jam but both are scrumptious.
I bet sugar crystals would look nice.
Y’all, these were delicious! Even the fat ones that exploded. With frosting they’d remind me of a Toaster Strudel or soft Pop-Tart. Mmm, I think I’ll go have another. When I make the next batch, closer to Valentine’s Day, I’m going to carve everyone’s initial inside the heart.
Then on the ones for the Mister, I’ll carve C+J. How cute is that?!
